&lt;p align=left&gt;&lt;span style="font-size:12pt;color:purple;font-family:宋体"&gt;    鲤鱼两侧的皮内各有一条似白线的筋，在烹饪前要把它们抽出。一是因为筋的腥腥味重，二是它属强发性物，尤其是在春天。&lt;/span&gt;&lt;span lang=EN-US style="font-size:12pt;color:purple;font-family:Arial"&gt;&lt;/span&gt;
&lt;p align=left&gt;&lt;span style="font-size:12pt;color:purple;font-family:宋体"&gt;    抽筋时，应在鱼的一边靠鳃后处和离尾部约&lt;/span&gt;&lt;span lang=EN-US style="font-size:12pt;color:purple;font-family:Arial"&gt;1&lt;/span&gt;&lt;span style="font-size:12pt;color:purple;font-family:宋体"&gt;寸的地方各横切一刀至脊骨为止（好像我切得太深了，以至后期烧鱼时尾巴都断了）。再用刀从尾向头平拍，使鳃后刀口内的筋头冒出，用手指尖捏住筋头慢慢拉便抽出了筋。用同样的方法再抽出另一侧的筋。&lt;/span&gt;&lt;span lang=EN-US style="font-size:12pt;color:purple;font-family:Arial"&gt;&lt;/span&gt;
